Ro-Tel Chicken


This is a recipe that we got from a friend...it is sooooooo yummy!!

6 Chicken Breasts, cooked and diced
1 (12 oz) pkg vermicelli (or any pasta)
1 (10 oz) can Ro-Tel Tomatoes and Chilies
2 T. Worcestershire sauce
1/2 Lb Velveeta Cheese, cubed
1 Lg. bell pepper, chopped (opt.)
1 Lg. onion, chopped (opt.)
1 can mushrooms (opt.)
1 1/2 sticks butter - if using peppers and onion.

Boil and season chicken breast. Save broth. Cook Vermicelli in broth, then drain - Do not rinse. Save broth to add later. Saute chopped onions, peppers, and mushrooms in butter (optional). Add Ro-tel -- I put my Ro-tel in our food processer and pulse for a minute. Add Worcestershire sauce, sauted onions, peppers, and mushrooms. Add vermicelli and cheese until melted. You can add some of the broth if it is too thick for you. Finally add the diced chicken. Bake at 350 degrees until dish bubbles.
